Harking back to the 1850s, this excellent leafy vegetable is often used as a replacement for spinach in our house after the spinach bolts to seed!

This veggie is packed with minerals. The leaves can get huge, but never grow to be too bitter to eat. We steam them at any size. Also great in stir fry, lasagna, pastas and soups.
